Air Drying (Heat Drying) is the use of high temperatures to dry the product in the drying chamber to make water evaporate from the product.

The main principle of air drying process is to maintain the drying chamber temperature at 50 – 70°C, which is equivalent to the drying temperature under the sun. At that point, the vapor in the product starts to evaporate and the product gradually dries up. When the products reach certain dryness, they will go to the cooling and packaging stages.

Air Dried products are not fried or soaked with oil, so they will not get oily or caramelized. After drying, the products are able to retain its softness, elasticity, natural flavor and not brittle as vacuum fried ones.
