Freeze Drying is one of the advanced technologies in post-harvest food processing. Freeze-drying is the use of low temperature to dry products in the drying chamber by sublimating water out of the products.

The main principle of freeze drying process is maintaining the drying chamber temperature at about 0-10°C, creating difference in temperature and pressure inside and outside the product. At that point, the vapor in the product starts to evaporate and the product gradually dries up. When they are dried, the product will continue in the cooling and packaging stages.

Freeze dried products are not fried or soaked with oil, so they will not get oily or caramelized. After drying, the product retains its natural flavor and is not brittle as when vacuum fried.
