Vacuum Dried (Sublimation drying in a vacuum environment) is one of the advanced technologies of post-harvest food processing. Sublimation in a vacuum environment is the removal of all the water vapor released from the product in the vacuum chamber when the product is dried by suction from the vacuum.

The main principle of sublimation in vacuum environment with oil is the evaporation of water in the product during drying process and the amount of oil absorbed to the product at 70°C. At that moment, the water in the product will start to evaporate and the vacuum will suck out the entire vapor to maintain a vacuum environment in the drying chamber. The product will be covered with a thin layer of oil to prevent the product from being oxidized and oily. Because the boiling point of the oil is 170-180°C, the drying chamber only maintains at 70°C so that the oil does not boil, preventing the oil from absorbing into the product like other fried products.

Because it is dried under vacuum conditions with such special conditions, the product after being dried still remains its original shape, color, not caramelized and not oily.
